Chicken Cacciatore is one of the most perplexing reipes that is out there. Every recipe is different but there is one thing that is consistant, the chicken is always braised! Here is our version.


  • 1 3/4 lbs skinless, boneless chicken thighs
  • 1/2 cup flour
  • 1 cup chopped shallots
  • 6 garlic cloves, minced
  • 1 Tsp. Galena Canning Company Seasoned Pepper Seasoning
  • 1 Tsp. Galena Canning Company Italian Seasoning
  • 1/4 cup Galena Canning company Extra Virgin Olive Oil
  • 1 each red & green bell pepper, coarsely chopped
  • 1 stalk celery, chopped
  • 1 cup sliced button mushrooms
  • 1/4 cup Galena Canning Company Bloody Mary Mix
  •  1 cup Galena Canning Company Chardonnay Artichoke Salsa
  • 1 1/2 cup canned Tomatoes



  1. Cut chicken into serving size pieces, about 1/2 -3/4 inch. Put flour and dry seasonings into a 1 gallon plastic bag and mix together. Once mixed add chicken to season.
  2. Heat Galena Canning Company Extra Virgin Olive Oil and 3 cloves minced garlic in a frying pan.  
  3. Add the chicken pieces to the pan and brown chicken on all sides, about 2-4 minutes on each side. Remove Chicken from pan and set aside.  
  4. In a stock pot or Dutch Oven, add 3 Tablespoons of Canning Company Extra Virgin Olive Oil, Scallions, Peppers , and Celery, Baby Bella Mushrooms and saute over medium high heat for about 5 minutes. Once you see everything start to loose it's firmness your are ready for the next step.
  5. Add Browned Chicken, Canned Tomatoes,  Galena Company Chardonnay Artichoke Salsa and Bloody Mary Mix.  Simmer covered for 60 minutes.

Serve over pasta, Rice or Polenta!!!​
