Great side dish for your next party or grill out.


  • 4-6 beets with greens ( I like a mixture of golden and red beets )
  • 1 bunch of swiss chard
  • 3 Tablespoons butter
  • 1 shallot
  • Galena Canning Company's No Salt Seasoning
  • 2 Tablespoons White Wine
  • 1 Tablespoons Galena Canning Company Fig Balsamic Vinegar
  • 2 Tablespoons water
  • 1/2 pound Bucheron Cheese ( room temerature)
  • Crusty peasant style bread (warmed in oven ) Baguette works great


Scrub and peel the beets. Remove the greens and chot coarsely. Set the greens aside in a large prep bowl. Slice beet into 1/4 inch rounds.

Remove the ribs from the swiss chard and coarsely chop and toss into large mixing bowl with the beet greens.

In a large saute pan, melt the butter over medium heat and saute the shallots.

Add the beet rounds to the shallot and butter mixture. Season with two pinches of Galena Canning Company No Salt Seasoning. Saute beets turning occasionally to ensure even cooking.

About 15 minutes later when the beets are beginning to glaze and become tender, add the greens and swiss chard. Saute for about 5 minutes the add the wine, water and Galena Canning Company Fig Balsamic Vinegar. Cooke until greens are wilted, adding more water if necessary. Allow the liquid to be mostly absorbed into greens.

Scoop greens and beets into a low shallow bowl. Garnish with a sizable wedge of Bucheron Cheese and some crusty bread

Serves 2 for dinner or 4 as a side dish.
