Quick and easy stuffed mushroom caps.


  • 2 packages of fresh mushrooms (about 24-36)
  • 1 jar of Galena Canning Company Spinach Artichoke Dip
  • 1 8oz package of cream cheese softened
  • 2 tablespoons Galena Canning Company Roasted Garlic Olive Oil
  • Shaved parmesan for a garnish
  • Chef Ivo's Ultimate BBQ Rub


In a mixing bowl prepare the Spinach Artichoke Dip using the instructions on the side of the jar.

Remove all of the stems from the mushrooms and place in a mixing bowl.

Drizzle the mushrooms with the Roasted Garlic Olive Oil and toss to make sure they are evenly coated.

Place mushroom caps on a foil lined baking sheet bottom side up. Leave about 1/2 inch between mushrooms for even cooking.

Using a spoon, place about 1-2 tablespoons of the prepared Spinach Artichoke Dip on the top of each mushroom.

In a preheated 350 degree oven, bake the mushroom caps for 12-15 minutes or until the tops are golden brown.

Remove from ovem and let cool for 1-2 minutes. Place on a large serving dish and sprinkle with the shaved parmesan and Ultimate BBQ Rub.

Serves about 8-12 as a side dish.
