Catfish Etouffee

2 U.S. Farm Raised Catfish Fillets

1 to 2 cups mixed Bell Peppers diced

1/2 cup diced Red Onion

1/2 cup Bias cut celery 1/4inch

2 Tablespoons chopped fresh Garlic

3 Tablespoons Olive Oil

2 teaspoons Fin and Fish Seasoning*

2 cups Chef Ivo's Etouffee Sauce*

2 teaspoons Cajun Devil Hot Sauce

1. Place olive oil, peppers, onion, celery, and garlic in a saute pan on high heat, saute until onions are soft. Add in Etouffee Sauce and reduce to a simmer.

2. In a 2nd skillet add a small amount of olive oil. Take catfish fillets and dust with the seasoning. Place into the skillet skin side up. Saute for approximately 4 to 5 minutes.

3. Turn the catfish over, take 1st skillet with etouffee sauce and pour over the fillets and reduce the heat to a low simmer until the catfish is done. Approximately 5 minutes.

4. Take a serving dish and spoon the Etouffee Sauce out, then carefully remove the catfish and place on the bed of Etouffee Sauce. Spoon extra sauce on top.

Serve dish with a side of fluffy white rice and Cajun Devil Hot Sauce.
