2 U.S. Farm Raised Catfish Fillets

2 Medium sized potatoes peeled & cut in paper thin slices

2 teaspoons Organic Herb Mustard*

3 Tablespoons Granny Smith's Apple Jalapeno Jelly*

4 Tablespoons Olive Oil

1. Preheat the oven to 350 degrees F (180 degrees C)

2. Take the catfish fillets and spread the mustard over the tops (skin-side down).

3. Arrange potato slices over the mustard pushing down gently.

4. Take the catfish and place potato side down in a nonstick skillet with the olive oil and brown for approximately 4 to 5 minutes.

5. Remove the catfish fillets and place them on a baking sheet and put into the preheated oven for approximately 12 to 14 minutes.

6. Remove the catfish from the oven to a serving plate.

7. Take a small sauce pan and place the Granny Smith's Apple Jalapeno Jelly into it. Warm and pour over the fillets.
