  • 2 tbsp Galena Canning Company California Extra Virgin Olive Oil
  • 1/4 cup Galena Canning Company Blueberry Vinaigrette or Raspberry Vinaigrette
  • 2 6oz boneless skinless chicken breasts
  • kosher salt 
  • fresh ground black pepper
  • 2 romaine hearts, shredded
  • 12 strawberries, hulled and thinly sliced
  • 1 avocado, pitted, peeled and thinly sliced
  • 1/8 red onion thinly sliced
  • 4oz crumbled goat cheese
  • 2oz thinly sliced prosciutto or crumbled bacon
  • 1 hard boiled egg, quartered



  1. Preheat oven to 350F. In an oven safe skillet over medium-high heat, heat oil. 
  2. Season each chicken breast with salt and pepper and place in the skillet. 
  3. Sear chicken, 3 to 4 minutes per side. 
  4. Transfer skillet to oven and continue to cook, about 8 minutes.
  5. Remove skillet from oven and transfer chicken to a cutting board and allow to cool for 7 to 8 minutes before cutting.
  6. Pour half of the dressing into a large mixing bowl and toss together with shredded romaine. Transfer coated romaine to a serving bowl and top with sliced chicken breasts, strawberries, avocado, onion, goat cheese, prosciutto and egg. 
  7. Serve entire salad, family style, along with remaining dressing.
