INGREDIENTS

  • 2 lbs flank steak
  • 4 tsp Galena Canning Company Ancho Chile Fiesta Rub
  • 6 cloves garlic, peeled
  • 1 medium onion, diced
  • 1 cup fresh cilantro separated
  • 16oz jar Galena Canning Company Southwestern Baja Salsa
  • 1 package tortillas, corn or flour
  • 2 cups shredded cheddar cheese, or Queso Fresco
  • 2 cups shredded red cabbage
  • 1/2 cup Mexican Crema
  • 2 limes, sliced
  • sliced avocado, optional

‚ÄčDIRECTIONS

  1. Coat the inside of the slow cooker with cooking spray.
  2. Slice the flank steak lengthwise and then each strip in half. Sprinkle the meat with the Ancho Chile Fiesta Rub. Place the flank steak in your slow cooker with the onion, garlic cloves and half of the fresh cilantro.
  3. Pour the whole jar of the Southwestern Baja Salsa over the steak.
  4. Cover and cook on low for 6 hours or until done.
  5. About 10 minutes before removing steak form the slow cooker, place a frying pan over medium high heat, place a couple corn tortillas and toasted until slightly crispy. A couple minutes each side should do. Do all of the tortillas and place on a plate for making tacos. You can also do over an open flame if you have a gas stove top or on the grill. If you are using flour tortillas you can skip this step.
  6. Remove from slow cooker and shred the steak with a fork. Save the reduced cooking liquid and salsa mixture to serve alongside.
  7. Place your tortilla on a plate and top with shredded cheddar cheese, then flank steak, the saved salsa mixture from the slow cooker, shredded cabbage, cilantro and a drizzle of Crema. Also great with sliced avocado.
