One of our favorite ways to use our Fresh Pesto! Try with your favorite flavor of Pesto! Also great on shrimp, scallops and chicken!

INGREDIENTS

  • 1 pound halibut or cod fillets
  • 1/4 jar Galena Canning Company Sun Dried Tomato Pesto
  • 1 tomato sliced thin
  • 1 cup bread crumbs 
  • 2 garlic cloves, minced
  • 2 tbsp butter, melted

DIRECTIONS

 

  1. Preheat oven to 400F.
  2. Combine melted butter, garlic and bread crumbs together in a small container.
  3. Pat dry fillets and spread a generous coating of Sun Dried Tomato Pesto over the top and sides of the fillets. Place 2 slices of tomato and bread crumb mixture on the top side of the fillets.
  4. Place fillets on a greased baking sheet or baking sheet with parchment paper.
  5. Bake for 15 minutes or until the fillets pull apart with a fork. Serve immediately from oven.

Great served with a mixed green salad with our Balsamic Herb Vinaigrette or Balsamic Bleu Cheese with Walnut Dressings.
