Croque Monsieur or Madame is a baked or fried ham and cheese sandwich. The dish originated in French cafes and bars as a quick snack. The word croque means "to bite, to crunch" and monsieur means "mister", so we can call it the Crunchy Mister. Add a fried egg to the top and you have the Croque Madame!


  • 8 slices country style bread, lightly toasted
  • 3 tbsp mustard, we have made using either our Dill Pickle Mustard, Dijon Mustard, Champagne Dill Mustard, Truffle Mustard and Hot Horseradish Mustard, all work great!
  • 8 slices ham
  • 4 cups Emmentaler or brick Swiss cheese, grated, divided
  • 1 cup Parmigiano-Reggiano, grated
  • 1 tsp Galena Canning Company Herb de Provence
  • freshly ground black pepper, to taste
  • 4 eggs


  1. Preheat broiler. 
  2. Place 4 slices of bread on a baking sheet and spread the top of each with mustard. Top each slice with 2 pieces of ham and 1/2 cup Emmentaler cheese and top with remaining 4 slices of bread. 
  3. In a small bowl mix together remaining Emmentaler cheese, Parmigiano-Reggiano and Herbs de Provence. 
  4. Sprinkle cheese and herb mixture over the 4 sandwiches.
  5. Broil until golden brown and bubbling, 6-7 minutes. 
  6. Season with black pepper, to taste.
  7. Let sandwiches rest 10 minutes before cutting and serving

‚ÄčNote: To transform your Croque Monsieur into a Croque Madame, top each sandwich with 1 egg fried, sunny-side up.
