Inspired from the frigid cold weather we had in January 2019, this simple, easy and tasty soup definitly hit the spot! Flavorful chicken soup, packed with flavor and a mild heat from the Five Amigos Fire Roasted Pepper Salsa!



  • 2 lb. boneless skinless chicken breasts (cubed)
  • 1 jar Galena Canning Company Five Amigos Fire Roasted Pepper Salsa
  • 6 cups chicken broth
  • Galena Canning Company Roasted Garlic Olive Oil
  • salt
  • pepper



  • Fresh cilantro
  • Queso fresco
  • Non fat greek yogurt
  • Red onion (diced)
  • Red cabbage (shaved on mandolin)
  • Lime slices
  • Avocado slices



  1. Heat a soup pot or Dutch oven over medium high heat and add the 2 teaspoons of the Roasted Garlic Olive Oil. Drop in chicken breast cubes and season with a pinch of salt and pepper. Let cook for about 7 minutes or until browned a little. Remove and place on a plate for later. Ok if not fully cooked, it will finish cooking later when simmering in the soup.
  2. Add a teaspoon of Roasted Garlic Olive Oil, jar of Five Amigos Fire Roasted Pepper Salsa and chicken broth to the soup pot and bring to a boil. Once boiling, lower heat, cover and let simmer for 30 minutes.
  3. After 30 minutes, add chicken back in and let simmer for 45 minutes over low heat, until chicken is super tender
  4. Serve in a bowl and garnish with fresh cilantro, cabbage, Greek yogurt, onions, lime juice, avocados and quest fresco. Feel free to leave anything out or add anything else that sounds good!
