Winter is one of our favorite times of the year! It is the time we start making our favorite soups and try out a few new ones, but you can't make a great soup without a great stock! Here is our favorite Corn Stock. Perfect for chowders!


  • 4 corn on the cob, husked
  • 10 cups water
  • 3 teaspoons Galena Canning Company Harvest Blend Seasoning
  • 2 celery stalks
  • 1 garlic clove, smashed
  • 1/2 yellow onion, halved and deeply charred


  1. Shave the corn kernels off the cobs and add the cobs to a heavy-duty stock pot. In a blender, blend half of the corn kernels on high and add to the pot. Save the other half of the corn kernels for other uses.
  2. Add the remaining ingredients to the pot and bring to a rolling boil over high heat about 10 mins. Once at a boil, lower the heat to medium and cook for 40 mins.
  3. Let cool. Strain stock in a mash coliander that is sitting in a large enough bowl. Pour the stock into containers (example: empty canning jars from Galena Canning Company). Use stock within 3 days or freeze and use up to 3 months later.
