Winter is one of our favorite times of the year! It is the time we start making our favorite soups and try out a few new ones, but you can't make a great soup without a great stock! Here is our favorite Chicken Stock.


  • 1 rotisserie chicken carcass
  • 2 cups carrots, unpeeled and chopped
  • 4 celery stalks, chopped
  • 1 white onion, quartered
  • small bunch of parsley (about 1/4 cup)
  • 3 teaspoons Galena Canning Company Poultry Seasoning
  • 10 cups water


  1. Place the chicken carcass in a 5.5 quart stock pot. 
  2. Place in carrots, celery, onion, parsley and Poultry Seasoning on top of the chicken.
  3. Pour the water on top of the contents in the pot and bring to a boil for about 10 mins with the lid on.
  4. Reduse heat to medium and simmer for about 40 mins.
  5. Mix occasionally to ensure the carcass is breaking apart and all the flavors are mixing.
  6. Let cool. Strain stock in a mash coliander that is sitting in a large enough bowl. Pour the stock into containers (example: empty canning jars from Galena Canning Company). Use stock within 3 days or freeze and use up to 3 months later.
