Winter is one of our favorite times of the year! It is the time we start making our favorite soups and try out a few new ones, but you can't make a great soup without a great stock! Here is our favorite Seafood Stock.


  • Shells from 1 pound large shrimp
  • 2 tablespoons Galena Canning Company Roasted Garlic Olive Oil
  • 2 cups chopped yellow onion (2 onions)
  • 2 carrots, unpealed and chopped
  • 3 stalks celery, chopped
  • 2 garlic cloves, minced
  • 1/2 lemon, cut into wedges
  • 1 bottle good white wine (1/2 cup for the recipe and the rest for you!)
  • 8 cups water
  • 2 1/2 teaspoons Galena Canning Company "cape cod style" Seafood Seasoning or Cajun Seasoning


  1. Combine all ingredients into a large (min 3 quart pot) pot
  2. Bring the water to a boil for 10 mins with the lid on, then reduse heat to medium and simmer for 40 mins. Mixing occasionally.
  3. Let cool. Strain stock in a mash coliander that is sitting in a large enough bowl. Pour the stock into containers (example: empty canning jars from Galena Canning Company). Use stock within 3 days or freeze and use up to 3 months later.
