  • 12 fresh jalapeño peppers
  • 8 ounces cream cheese, softened to room temperature
  • 1 cup shredded cheddar cheese
  • 1 jar of your favorite flavor Galena Canning Company Pepper Jelly (we recommend Raspberry, Strawberry or Granny Smith)
  • 12 slices of bacon, cut in half
  • 24 toothpicks


  1. Preheat oven to 400 degrees F. Line a large baking sheet with parchment paper (best for clean-up). Place a baking rack on top of the baking sheet. Soak the toothpicks in water to prevent burning. Set aside.
  2. Cut jalapeño peppers in half lengthwise; remove seeds and center membrane. Set aside.
  3. Using a handheld or stand mixer fitted with a paddle attachment, beat the cream cheese, cheddar cheese and half of the jar of pepper jelly until combined. Spoon fill equal amounts among all 24 jalapeño halves.
  4. Wrap each stuffed jalapeño with a half slice of bacon and stick toothpick through the center to assure the bacon stays in place. Place each jalapeño on the backing rack and bake for 25-28 minutes or until bacon is crisp to your liking.
  5. While the Jalapeño Poppers are cooking, warm the left over pepper jelly to use as a dipping sauce.

Serve immediately and enjoy!!!

You can also do these on the grill. Make sure to spray your grilling grates with oil to prevent sticking.
