Pie Crust


·      1 stick of unsalted butter

·      1 ½ cups of plain flour

·      1 egg, beaten

·      1 teaspoon of lime juice


Pie Filling


·      1 8oz block of cream cheese

·      1 jar Galena Canning Company Key Lime Curd




1.   To make the Pie Crust, place the flour and 7 tbs cold butter in a food processor and blitz until you have the texture of breadcrumbs. Add the beaten egg and lime juice and blend until a ball of dough forms.

2.   Tip the dough ball on to a work surface and knead the dough lightly until smooth. Wrap in plastic wrap and place in the fridge to chill for 30 mins.

3.   Preheat the oven to 350 degrees and grease a muffin baking pan with 1 tablespoon of the butter.

4.    Unwrap the dough and place it on a clean work surface. Roll the dough into a log shape and divide it into 12 balls. Roll each ball out to fit the holes of the cupcake pan, only going half way up the holes and line each one, being careful to press the pastry into the very edges of the pan.

5.   Bake the dough for 10-12 mins or until the dough is golden brown and firm. Remove the pie crusts and allow to cool while you make the filling.

6.   To make the filling, whisk together the cream cheese and Key Lime Curd in a mixing bowl.

7.   Divide the filling between the pie crusts. Garnish with a little lime zest and place in the fridge for at least 2 hour to set.
