This could possibly be the best Italian styled pasta salad ever! Sweet roasted tomatoes blended with the saltiness from the cheese and lots of herbs!


  • 4 cups of grape tomatoes
  • 1 pound dried pasta, bite-sized shape of your choosing
  • Galena Canning Company Roasted Garlic with Rosemary Olive Oil
  • Galena Canning Company Gourmet Bread Dipping Grinder
  • 6 ounces crumbled salty cheese, such as ricotta, feta, queso fresco, etc.
  • 1/2 cup pine nuts, well toasted
  • 1/2 cup Galena Canning Company Stuffed Olives, your choice on flavor
  • 3 tablespoons lemon juice
  • 3 tablespoons red or white wine vinegar
  • handful fresh basil leaves, roughly chopped



  1. Heat oven to 300 degrees F. Cover 1 to 2 baking sheets with parchment paper or a nonstick baking mat. Cut the grape tomatoes in half lengthwise and arrange cut side up in a single layer on prepared sheets. Drizzle lightly with the Roasted Garlic and Rosemary Olive Oil and lightly season with the Gourmet Bread Dipping Grinder. Bake in oven for approximately 90 minutes, until somewhat shriveled and dry to the touch, but not fully dehydrated. Once they are done set aside and let cool.
  2. While the tomatoes are cooking start boiling the water for the pasta and cook according to the instructions on the package. Once prepared drizzle the pasta with Roasted Garlic Rosemary Olive Oil, toss to make sure all the pasta is covered and place in the refrigerator to cool.
  3. In a small mixing bowl combine the lemon juice, vinegar, 1/8 cup of Roasted Garlic Rosemary Olive Oil and grind the Bread Dipping Seasoning over the top and whisk together. (we usually grind the seasoning until you can’t see the oil anymore, you may want more or less. Start small and taste often until desired flavor).
  4. In a giant mixing bowl, place the cooked pasta, roasted tomatoes, cheese, pine nuts and olives and toss to combine all of the ingredients. Add dressing to taste, along with any extra bread dipping seasoning. Top with the fresh basil to finish.
