Cajun Catfish with Honey Dijon Bacon Potato Salad

Å“ cup FishermanÂ’s Choice Breading*

1 Tablespoon Blasting Powder Seasoning*

4 - U.S. Farm-Raised Catfish Fillets

1 Å“ to 2 cups frying oil

5 cups cooked & sliced potatoes

1 medium red onion diced

1 Å“ cups celery diced

1 Å“ cups cooked and drained bacon chopped

6 ounces Honey Dijon Marinade*

Chef IvoÂ’s Seasoning Salt* - to taste

Parsley for garnish

1. Take potatoes, onion, celery, bacon and Honey Dijon and mix well in a large bowl. Adjust taste with Seasoning Salt. Garnish with finely chopped parsley (may be all done the day before).

2. Mix FishermanÂ’s Choice Breading with Blasting Powder. Moisten fillets with milk or water. Roll in breading, shake off extra.

3. In a large skillet, heat oil and fry catfish until golden brown approximately 4 minutes, turning once). Catfish should be flaky to fork.

4. Place Cajun Catfish on a platter with the Honey Dijon Bacon Potato Salad and garnish with lemon wedges.
